My Favorite Healthy dinner: Country Style Pork ribs, Cauliflower Mash , & Green Beans

This is a very healthy meal that you can make fast and cook the ribs while you are busy throughout the day. The cauliflower and green beans can be made about an hour before you are ready to eat/serve. The cauliflower takes the place of mashed potatoes and is healthier for you as it eliminates the starches that you would have with the potatoes.

Ingredients:

1 pack of Country Style Pork Ribs

1 head of Cauliflower

! package of frozen Green Beans

4 tablespoons of Kerrygold Irish butter with spices

Greek seasoning, salt, garlic powder

Directions:

Place Country Style Pork Ribs in slow cooker, on low for 6-9 hours. Season with Greek seasoning.

An hour before you are ready to eat – wash and cut up cauliflower.

Steam cauliflower until soft. Place the cauliflower in large mixing bowel or blender and mix/blend until a smooth consistency adding Kerrygold butter, salt and garlic powder to taste. You may also add Almond Milk or regular milk (which ever you prefer) to make it a little creamier.

Heat up frozen green beans in microwave or on the stove as directed.

Serve when desired!!!

Crockpot (Slow cooker) Chili

This is definitely not the way my mom taught me! It is very hearty and it makes a lot!! (You can cut in half!) It is easy and simple. Good thing is you can always freeze this for a cold day!!! It also has a lot of fiber!!! (Definitely not Paleo approved!)

Ingredients:

2 cans of red beans

2 cans of dark red kidney beans

2 cans of light red kidney beans

2 cans of crushed tomatoes (seasoned if you like)

2 lbs of ground hamburger

2 green bell peppers

1 red bell pepper

1 yellow/orange bell pepper

1 large onion (yellow or white)

Chili powder – to your taste

Other seasonings to your taste

Directions:

Open and drain all your beans, getting the oils off of them. Put in crockpot. Add crushed tomatoes, cut up peppers, cut up onions and chili powder to the crockpot. Cook on slow for 7-8 hours. It will cook down and make a sauce.

Two hours before you are ready to serve, brown hamburger and season (chili powder and your desired seasonings) on the stove. Drain grease into a container. Then add to crockpot. This will make the hamburger not taste so rubbery!

Cook for at least two more hours on low to combine all the ingredients and seasonings.

Serve with or without toppings!!!!

Breakfast “Muffins”

This is a very simple recipe, full of protein and vitamins!!! You can also freeze them and then just pop them in the fridge the night before and reheat in the microwave!!!

Ingredients:

9 eggs

1 pound of hamburger (or any other type of meat ex: ground breakfast sausage, bacon cut up)

4-5 handfuls of spinach and kale mix (you may use one or the other individually, I use both)

Directions:

Brown hamburger in a pan on the stove. Drain grease.

Add in spinach and kale, cook down a little.

Scramble 9 eggs in a large bowl. Add cooked hamburger and spinach/kale mixture.

Add mixture to the scrambled eggs and stir.

Spray a cupcake/muffin tin with non-stick cooking spray.

Fill each individual muffin place with mixture. (Makes a dozen)

Bake in oven at 350 degrees for 30-40 min, until lightly brown on the top.

Let them cool slightly. Store in a container or plastic bag in refrigerator or freezer until ready to eat.

Breakfast muffins

You can also add cheese before cooking or add afterwards when heating up. I use a little goat cheese (any would work including feta) after I reheat or when I go to eat them. This is an easy recipe for a quick breakfast and can be used ahead of time. This is also a Paleo recipe (without the cheese unless it is goat cheese.

Having a disability is hard just on it’s own but other complications tend to happen, including weight gain, due to some limit on the ability to work out!!!
